I Choose to Make My Traveling Snacks (February 24, 2013)

Long day coming up. A fazillion basketball games mixed with doc appointments and errands.

DRIVE THROUGH!!

MCDONALD’S!!!

No. I will not succumb!

I will bring our food.

Oh, I hate doing that. For you moms of many or moms of just a few with big stomachs, it’s like cooking and packing Thanksgiving dinner and all for naught. You get home, all the food has been consumed and before you get your coat hung up, Mom, is there something I can snack on. I’m starving.

My mental response: Starve, then.

(So grateful am I for the filter between brain and mouth.)

Solution to food issue: boneless, skinless chicken breasts; shredded parmesan, romaine lettuce, caesar dressing, salsa (optional), flour tortillas. Those are the makings of a Chicken Caesar Salsa Wrap. Portable, light, filling, nutritious. Yum. And for me, a salad bowl.

You know the huge stoneware you earned at some Pampered Chef party? The one you only use for big birds when guests are about? Place a bunch of chicken breasts in there and season them as you like (I used garlic pepper). Put the stoneware in around dinner time on 200-250 degrees. Just after bedtime, they’ll be done. Put them in the fridge. In the morning, prep the sandwiches, pack and go!
